Bowled Over Red Rice Salad

Materials
- 250 gms Quilla Piquant South cubed
- 200 gms Red Rice cooked
- ½ cup Onions cubed
- ½ cup Red Bell Peppers cubed
- ½ cup Yellow Bell Peppers cubed
- ½ cup Cucumber cubed
- ½ cup Red Cabbage shredded
- 1 piece Lemon
- ½ cup Coconut grated
- 2 tbsp Honey
- 2 tbsp Coconut Oil
- Coriander chopped, for garnishing
Instructions
- In a large mixing bowl, add the rice and diced vegetables.
- Add lemon juice, crushed black pepper, salt, honey, coconut oil and coriander leaves. Toss well.
- Heat about a teaspoon of oil in a non-stick pan. Sauté the Quilla until it turns golden-brown.
- Add the sautéed Quilla to the mixing bowl. Toss thoroughly.
- Transfer to a serving bowl and garnish with freshly grated coconut. Your Bowled Over Red Rice Salad is ready to serve.
Notes
You can replace the red rice with any type of rice that's available. We have used red rice because it is healthier, but this recipe works well with any kind of rice.
